To make the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, enough for 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Put the listed components inside a pan, heat until it reaches a light boil, agitating until the sugar dissolves. Then, take off the stove and leave to cool fully. Transfer into an sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for around a month.
Preparing the Batch Mix: Mix all the liquids in a sizeable container, let it rest for one hour, then filter it best through muslin, making it fully clarified.
When ready to serve: Measure 85ml of your premix into your stirring glass filled with ice, gently stirring gently for a minute to chill. Filter into an cold coupe glass or similar, garnish with a few cranberries and finish using a quick spritz of mandarin oil over the drink.
